Vegan fayre! About me: i'm a self taught vegetarian and dairy free cook who has worked in various kitchens in Amsterdam, New York and London for the last 15 years. Previously I’ve supplied health food stores with a variety of healthy option cakes and snacks and planned everything from exravaganza feasts for two hundred people to intimate meals for two so I’m well versed in variety. My specialization in medieval food has won many hearts, at least in part due to the uniqueness of my approach. I also coach people privately to create unique dishes around an individual’s lifestyle, supplying advice and support so you can make lovely food for you and your family. With this in mind, It’s with great joy that I’ve become involved with the Bonnington Café. My commitment to local foods means I’m a regular at London's farmers markets and indeed run my own allotment in central London. I take a joined up approach to food in that the closer it is to you from harvest to fork the better. It’s healthier for you and better for the planet as we cut those pesky food miles. A green approach to cooking or careful cooking means cutting wastage by buying only what you need and buying less but better quality produce. This will cut you bills and help reduce your carbon footprint. This also means I’m a great believer in supporting independent producers and try and use specialty shops and suppliers where possible. The joy of the challenge in developing new approaches and styles of dishes is paramount for me. Working on gluten free, yeast free or sugar free foods has been a natural development to this, catering for diets that are in transition as well as established. We all change in our needs and wants and this need not be a trial for us but a blessing. Basic philosophy: quality, sustainability and simplicity.
